Tenuta degli Dei – Cavalli Family

By going to the estate founded by Roberto Cavalli in the upper part of the Panzano area (heart of Chianti), although inspired by the notoriety of the fashion brand, you will discover an authentic love for the land. It is that of Tommaso Cavalli, Roberto’s son, involved at 360 degrees in wine production.

The first vines were planted in 2001; the harvest of 2006 was the first to be processed and bottled. In a few years a style and dedication to a goal of high quality and classic elegance have become established.

The passion for the great Bordeaux wines is the basis of the grapes’ choice, that includes Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Merlot. The main wine at Tenuta degli Dei is a Bordeaux blend, called Cavalli, that, beyond the deep color and the smell intensity, seeks the gracefulness of drinking. This goal is achieved thanks to low yields in the vineyard and foresight of cellar operations.

Cavalli, a limited edition of 20-25 thousand bottles, ferments in steel vats and ages for 18 months in Bordeaux barrels, half of which are new every year: it is a wine of great character that flies high. The wine is made with Cabernet Sauvignon (50%), Petit Verdot (35%) and Cabernet Franc (15%); it is deep purple red and very complex at the nose with berries, herbs, spices, forest floor and toast. Tannins are supple and refined.

With the 2008 vintage, Merlot is removed from the Cavalli blend and is processed to create a separate label: Le Redini (the Reins). Its maturation takes place in used barriques and tonneaux; the sweetness of the wood is only the backbone of its character and not the first impression. It is a refined and refreshing Merlot, that benefits of the altitude of the vineyard from which the grapes come.

Sangiovese was introduced later, when Tommaso decided to produce Chianti Classico. His Chianti Classico, named Forcole, is a 100% Sangiovese from a single vineyard. The wine has a typical imprint of the place, Panzano, which means body and energy. It is bright ruby red and has red currant and red cherry aromas.
